Super Berry Chia Pudding

Blueberries and Raspberries are a powerhouse of nutrients benefiting your blood, heart , skin and immunity. Chia is an excellent source of omega-3 fatty acids, rich in antioxidants, and provides fiber, iron, and calcium. Maca is added for mood boosting wellness. And lastly we added vanilla and dates/ or maple syrup for sweetness. Yum!

(makes 1 serving)

3 Tbsp chia seeds

1 cup plant-based milk of your choice

1/4 tsp vanilla extract (or use vanilla flavored milk)

dash cinnamon

1 Tbsp maple syrup or 2 diced medjool dates (pitted)

1 tsp blueberry powder

1 tsp raspberry powder

fresh blueberries or raspberries for topping (optional but so good!)

1/2 CrunchTime Bar -chopped into small pieces (optional for topping)

1. Place the chia seeds, plant milk, dates or maple syrup, vanilla and cinnamon in a jar and shake or stir well to combine. Let sit in the refrigerator overnight or for up to 4 hours until thickened.

2. Take out half the chia pudding and place in a small bowl. Gently stir in the blueberry and raspberry powders to combine.

3. You can spoon this over the regular chia pudding or layer the pudding mixtures to create a design of your choice.

4. Top with more berries of your choice and chopped CrunchTime Bar chunks. What a great way to start or end your day!
