Vegan Banana Chocolate Crepes

We LOVE these crepes! They are made with little oil because the applesauce helps keep them soft and moist. We added our Chocolatl Chocolate Maca spread to give the benefits for brain, body and mood that cacao and maca offer. Banana adds potassium and manganese for beautiful skin. These taste so great you won't believe they are healthy, too!

(makes 2-3 servings)

INGREDIENTS:

1 cup all-purpose flour or gluten free flour

1/8 teaspoon salt

1 1/2 cup unsweetened almond milk (or plant-based milk of choice)

1/4 cup unsweetened applesauce

2 tablespoons melted coconut oil

1 teaspoon vanilla extract

2 tablespoons coconut sugar (optional if you like a sweeter taste)

FILLING & TOPPINGS:

Chocolatl Chocolate Maca Spread

1 banana thinly sliced

Coconut Whipped cream or other plant based whipped topping

Chocolatl CrunchTime Bar - chopped into small chunks (optional)

DIRECTIONS:

1. In a large bowl, sift in the all-purpose flour/ gluten free flour to ensure that there are no clumps (you can use a sifter or a strainer for this). Add in the salt and mix until combined. Slowly whisk in the almond milk, applesauce and coconut oil until everything is smooth. Alternatively, you can add all of theses ingredients into a high speed blender and blend until everything is smooth.

2. Heat a large nonstick skillet over medium low heat. You may need to lightly oil the pan with coconut oil spray depending on how nonstick it is. Once the pan is heated, add in 1/4 cup of batter and then quickly tip and rotate pan to spread batter as thinly as possible.

3. Once the crepe appears dry on top (after about 1 minute), use a spatula to gently flip it over and cook for about a minute more. Flip the crepe over once more and cook for another 30 seconds to ensure that everything is cooked through. You will know that the crepes are done when you see nice golden streaks on them. Set the crepe aside on a large plate and continue until you have cooked all of the batter.

4. To serve - gently spread half of each crepe with Chocolatl Chocolate Maca Spread. Then place thinly sliced bananas on top of the spread. Fold the other side over and top with coconut whipped cream and a sprinkle of chopped Crunchtime Bars.

5. Dig in and Enjoy!
